I used to think breakfast sandwiches were only something you could order at a restaurant or fast food joint. I mean, who has time to cook and assemble ingredients when you’re trying to make lunches, wrangle kids, and get everyone out the door on time without spilling coffee on your clean shirt?
And then it dawned on me… you can meal prep breakfast sandwiches AHEAD of time!

Not only are make-ahead breakfast sandwich recipes lifesavers for busy weekday mornings, but they’re also delicious! And much healthier for you than typical fast food places.
Oh, and they’re cheap! Eggs are one of the cheapest proteins you can buy, and when paired with your favorite protein (that you got on sale or marked down or found hanging out at the bottom of a freezer drawer), you have a delicious quick breakfast sandwich just waiting to be enjoyed.

Ingredients for Bacon Egg and Cheese Sandwich
The ingredients for a bacon egg and cheese sandwich are just that – bacon, egg, and cheese! That’s a classic combination, but there’s no limit to the creativity that can go into a breakfast sandwich:
- Protein: Bacon, sausage, Canadian bacon, turkey bacon, and ham are all delicious options.
- Egg: Scrambled or over-easy fried eggs are the best options, and whole eggs taste best (in my opinion). You can boost the protein by adding egg whites, or just use only egg whites if you prefer. Keep reading for how to cook an egg using a round mold so it stays in your sandwich!
- Cheese: Technically cheese is optional, but it really adds a savory bite to the sandwich. Mild cheeses like mild cheddar, Monterey jack, and Colby jack are best for breakfast sandwiches. Or even go fancy with goat cheese, feta cheese, or cream cheese!
- Bread: I went with English Muffins because that’s what I had, but the options are endless. Croissants, tortillas, bagels, maybe even an egg white wrap for the low-carb folks.

Scrambled Egg Sandwich vs. Typical Breakfast Egg Sandwiches
I love scrambled eggs and spent quite a long time perfecting a recipe for the Best-Scrambled Eggs ever. However, I’m not a fan of the scrambled egg sandwich. The egg tends to fall out of the sandwich, making it a messy meal.
I recommend either cooking your eggs over easy OR using a mold to contain your scrambled eggs so that they stay inside of your sandwich. Keep reading to see how to cook both types of eggs.
You can also make eggs on a sheet pan or muffin tin if you’re feeding a crowd or cooking in bulk. Or poach them, or make fried eggs or sunny side up. Or make your favorite omelet. Go with your gut!

How to Make A Sandwich for Breakfast Recipe
Step 1: Prepare your ingredients. You’ll want to have everything ready to go before you start. This means toasting your bread, smearing avocado or butter or mayo, unwrapping cheese, scrambling the egg in a mug, etc. Once your eggs are done, you want to be ready to assemble.
Step 2: Preheat a nonstick griddle or skillet over medium heat. Use cooking spray to coat the nonstick skillet and both sides of a mason jar lid ring (the ring only). I used a wide-mouth ring. Set aside.

Step 3: Place the ring on the nonstick skillet (I prefer lip side down) and either crack the egg into the ring or pour the scrambled eggs into the ring. Use a pair of tongs to push the ring down, keeping the ring touching the skillet for 10-15 seconds so the eggs don’t sneak out from underneath the mold.

Step 4: Cook the egg for about 2 minutes, or until the egg starts to cook around the edges. If bubbles appear in the eggs as they cook, pop them with a fork. This ensures the egg cooks through the center.

Step 5: Once you see the egg cooked around the edges, use a pancake flipper to scoop the entire egg and mold and flip it over. Continue to cook for about 1 minute.

Step 6: Remove the egg to a cutting board, carefully remove the ring, and assemble your egg sandwiches.
How to Freeze Breakfast Bagels Sandwiches
Whether you use bagels or toast or English muffins or rolls or biscuits, you can freeze breakfast bagel sandwiches for later! Follow the recipe as written and let the sandwich cool for a couple of minutes. Wrap the sandwich with aluminum foil, ensuring there is no exposed sandwich. Place the sandwiches in an airtight freezer-safe bag and freeze.
To thaw, remove one wrapped freezer breakfast sandwich and place it in a preheated oven, toaster oven, or air fryer until it’s warmed through. Warming in the microwave is not ideal, but can be done in a pinch. Be sure to remove the aluminum foil before using the microwave.

Waffle Sandwich
Use your favorite waffle instead of a bagel or English muffin. Blender Oatmeal Waffles are our go-to waffle recipe, but Sourdough Waffles or even Chocolate Waffles would be fun! Pancake sandwiches are a thing too, so don’t rule out that option either!
