The Best Breakfast Sandwich Recipe

Hands down the tastiest and easiest breakfast sandwich you’ll ever make. Freshly cooked eggs, warm bacon (or sausage), gooey cheese, and buttery toasted English Muffin (or bagel or croissant) come together for the most indulgent breakfast sandwich you’ll ever make.

Ingredients

  • 2 biscuits (or English Muffins, bagels or croissants)
  • 2 slices of bacon, cooked (or other protein)
  • 2 slices of cheese (any type)
  • 2 thick cut slices of tomato
  • 2 eggs (see below for cooking instructions)
  • 2 Tbsp butter or mayo (optional)

Instructions

  1. Prepare your ingredients. You’ll want to have everything ready to go before you start. This means toasting your bread, smearing avocado or butter or mayo, unwrapping cheese, scrambling the egg in a mug, etc. Once your eggs are done, you want to be ready to assemble. 
  2. Preheat a nonstick griddle or skillet over medium heat. Use cooking spray to coat the nonstick skillet and both sides of a mason jar lid ring (the ring only). I used a wide-mouth ring. Set aside.
  3. Place the ring on the nonstick skillet (I prefer lip side down) and either crack the egg into the ring or pour the scrambled eggs into the ring. Use a pair of tongs to push the ring down, keeping the ring touching the skillet for 10-15 seconds so the eggs don’t sneak out from underneath the mold.
  4. Cook the egg for about 2 minutes, or until the egg starts to cook around the edges. If bubbles appear in the eggs as they cook, pop them with a fork. This ensures the egg cooks through the center. 
  5. Once you see the egg cooked around the edges, use a pancake flipper to scoop the entire egg and mold and flip it over. Continue to cook for about 1 minute.
  6. Remove the egg to a cutting board, carefully remove the ring, and assemble your egg sandwiches. 

Notes

There’s no limit to the creativity that can go into a breakfast sandwich:

  • Protein: Bacon, sausage, Canadian bacon, turkey bacon, and ham are all delicious options.
  • Egg: Scrambled or over-easy fried eggs are the best options, and whole eggs taste best (in my opinion). You can boost the protein by adding egg whites, or just use only egg whites if you prefer. Keep reading for how to cook an egg using a round mold so it stays in your sandwich!
    Cheese: Technically cheese is optional, but it really adds a savory bite to the sandwich. Mild cheeses like mild cheddar, Monterey jack, and Colby jack are best for breakfast sandwiches. Or even go fancy with goat cheese, feta cheese, or cream cheese!
    Bread: I went with English muffins because that’s what I had, but the options are endless. Croissants, tortillas, bagels, maybe even an egg white wrap for the low-carb folks.
