Anytime we go out for Mexican, my husband and I always order fajitas.
Sometimes it’s beef, sometimes chicken, but we love knowing that our meal is mostly vegetables and protein, and SO, SO GOOD!
Since cooking at home is cheaper than going out, I started looking for a great slow cooker chicken fajitas recipe that would live up to our expectations. And after several rounds of testing, I finally created one that made the cut!
BEST SLOW COOKER CHICKEN FAJITAS
I’m not joking when I say that I made A LOT of crockpot chicken fajitas while testing this recipe.
Some were boring, some were too watery, some had really tough chicken…most were nothing like the fajitas we get when we go to dinner.
Finally, though, I created a recipe that was:
- Packed full of flavor. There is no way these crockpot chicken fajitas will turn out boring or bland!
- Nearly hands-off. The slow cooker does all the cooking, so you can do other, more important things.
- Juicy and tender. The chicken is perfectly juicy and tender every time!
- Easy to make ahead. You can prep the ingredients ahead of time if you’re super pressed for time!
- Freezer-friendly. You can either put the prepped ingredients in a freezer-safe bag or freeze the cooked chicken fajitas. Either way, it’s a meal ready for a quick dinner later on!
- Ready in 4 hours. A short 4-hour cooking time means dinner is ready faster than most slow cooker recipes, and you only put in a little effort!
CHICKEN FAJITA RECIPE INGREDIENTS
This chicken fajita recipe calls for just 4 simple ingredients!
- Homemade Fajita Seasoning (or Homemade Taco Seasoning Mix)
- Large bell peppers (we like red bell peppers and green bell peppers), sliced into strips
- Onions, sliced into strips
- Boneless skinless chicken thighs, cut into strips
- For serving (as desired): tortillas, sour cream, guacamole, red onion, shredded cheese, salsa, cilantro, diced jalapeno, fresh lime juice, avocados, diced tomatoes, etc.
HOW TO MAKE SLOW COOKER FAJITAS
Step 1: Prepare the homemade fajita seasoning.
Step 2: In a large slow cooker (I have this 6-quart slow cooker), layer half of the bell peppers, half of the onions, and half of the raw chicken. Sprinkle half of the homemade fajita seasoning over the peppers, onions, and chicken.
Step 3: Repeat this same process – layer the remaining bell peppers, onions, and chicken, and sprinkle the rest of the homemade fajita seasoning over the top.
Step 4: Turn the slow cooker on low and cook for 4 hours.
Step 5: When the slow cooker is done, use a glass measuring cup to carefully scoop out the excess liquid. You’ll need to do this in batches to get as much liquid out as possible.
Step 6: Serve slow cooker fajitas tucked inside tortillas or in a bowl of rice with your favorite toppings. If desired, cut chicken or shred it with two forks before serving. Shredded chicken will go further than diced.
Place any leftover chicken in an airtight container and keep it in the fridge for up to 3-4 days. You can also make this a freezer meal to dump and go – just chop everything up and put it in a resealable freezer bag!
TIPS FOR THE BEST CROCKPOT FAJITAS
The biggest issue I came across while testing this crockpot fajitas recipe was the fact that the ingredients released juices while cooking, creating a “soup” of sorts when it was done cooking.
- Unfortunately, all the spices I had used got lost in those juices, and our fajitas were left tasting bland and boring. And let’s be honest – no one wants bland and boring chicken fajitas!
- I increased the spices a little, and then a little more, and finally got the right ratio to make the best chicken fajita recipe!
- Serve the slow cooker chicken fajitas with a slotted spoon to avoid any additional liquid in your tortillas.
- You can save any extra liquid from straining the chicken fajitas and use it in place of some of the broth in Tortilla Soup!
SERVE WITH CROCK POT CHICKEN FAJITAS
I like to serve crock pot chicken fajitas with Cilantro Lime Rice and all the typical taco toppings. You can also serve these slow cooker chicken fajitas with any of these:
- Serve over rice
- Wrap up in Flour Tortillas or Corn Tortillas
- Enjoy with Homemade Tortilla Chips and Salsa or Simple Guacamole
- Have a side of beans
- Top with Lime Crema

A great way to customize this easy recipe is by making it a little spicier. For example, you can add a little chili powder or cayenne pepper to spice up the fajitas. Another great way to jazz up this recipe is by adding some green chiles or poblano peppers instead of bell peppers for an extra kick!

- 4 tsp chili powder
- 2 tsp ground cumin
- 2 tsp paprika
- 2 tsp granulated sugar (optional)
- 1 tsp garlic powder
- 1 tsp onion powder
- ¼ – ½ tsp cayenne pepper
- ½ – 1 tsp salt
