Slow Cooker Chicken Fajitas

These slow cooker chicken fajitas turn out so flavorful, juicy, and tender! Made with just 4 ingredients, they’re mostly hands-off and freezer-friendly. Serve with Easy Homemade Salsa, Guacamole, and Lime Crema.

Instructions

  1. Prepare the homemade fajita seasoning (see notes below for ingredients)
  2. In a large crockpot (I have this 6 quart slow cooker), layer half of the bell peppers, half of the onions, and half of the chicken. Sprinkle half of the homemade taco seasoning over the peppers, onions and chicken.
  3. Repeat this same process – layer the remaining bell peppers, onions, and chicken and sprinkle the rest of the homemade fajita seasoning over.
  4. Turn the slow cooker on low and cook for 4 hours.
  5. When the slow cooker is done, use a glass measuring cup to carefully scoop out the excess liquid. You’ll need to do this in batches, to get as much liquid out as possible.
  6. Serve tucked inside tortillas or on top of a bed of rice with desired toppings.

Notes

Prepare the homemade fajita seasoning:

  • 4 tsp chili powder
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 2 tsp granulated sugar (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ – ½ tsp cayenne pepper
  • ½ – 1 tsp salt
