Every year at this time, I find myself trying to slow down the harvest and holiday seasons so we can savor every part of it. I like to add special holiday touches to even the smallest things, and this pumpkin spice coffee recipe is the perfect example!
Plus, this has got to be one of the easiest holiday “recipes” ever. In fact, it’s really more of a “method” than a recipe. You just add two simple pantry staples to your basic pot of coffee in a coffee maker (or a French press, if you prefer) and, in minutes, you’ve transformed it into the perfect cup of warm, cozy pumpkin spice coffee!

- Coffee Grounds. For your standard 12-cup pot of coffee.
- Pumpkin Pie Spice. I keep a big batch of Homemade Pumpkin Pie Spice ready to go for all of my fall favorites.
- Pure Maple Syrup. I love the sweetness of syrup with this strong coffee. It gives just the right amount of sweetness! You can also use brown sugar to lightly sweeten the pot of coffee.
HOW TO MAKE HOMEMADE PUMPKIN SPICE COFFEE
Step 1. Place the coffee grounds in the filter, then sprinkle the pumpkin pie spice on top.
Step 2. Fill the coffee maker with water, then pour maple syrup into the bottom of the empty carafe.
Step 3. Set the carafe in the coffee maker and brew as usual.
That’s it! Serve your hot coffee with your favorite creamer, whole milk, or non-dairy milk (almond milk, coconut milk, or oat milk!) to top it off.
If you prefer cold brew coffee, add the pumpkin spice mix in with your coffee grounds in your favorite cold brewed coffee maker. Mix with milk to make an iced latte!

I don’t have one of those, so I haven’t tried it, but if you have a refillable pod to use for your machine, you might be able to use this pumpkin coffee method.

This recipe is exactly what I’ve been looking for. However, I’m only serving myself and I only make 30 ounces of coffee at a time (in a 10 cup brewer). Do you have a suggestion on how much pumpkin spice to use?

I think a quarter teaspoon or a little less would work. Hope this helps.
Only problem with this is the cinnamon will clog the coffee filter and cause the coffee to overflow out of the filter.
Did this happen to you, John? Maybe use less cinnamon and spread it out more.
