Pizza has been a long-time favorite in the Crumbs household. We perfected the Best Homemade Pizza Dough, learned how to make our favorite Pizza Sauce, and even learned how to reheat pizza in the air fryer for super crispy crust!
Our love for pizza stems back to long ago when Mr. Crumbs picked up a slice every day after class. He was introduced to buffalo style pizza during his college years, and it immediately became his favorite.
And when this buffalo chicken pizza is on the meal plan, we’re all excited!
WHAT IS BUFFALO CHICKEN PIZZA?
Buffalo chicken pizza is a pizza topped with spicy buffalo sauce, cooked chicken, mozzarella cheese, and a creamy dressing like ranch or blue cheese. It combines the heat of buffalo chicken wings with the texture of pizza for a bold, balanced flavor.

- Quick and easy: Although there are several parts to this pizza, they’re all easy to put together.
- Prep ahead: I can prep most of the components days in advance! From cooking the chicken to making the sauce, I can do most of the work ahead of time, so on pizza night, I can mix up the dough and go!
- Deliciously spicy and creamy: This buffalo style pizza has the perfect mix of heat and creaminess.

You all know I love to nerd out on the science behind why things turn out the way they do. If that intrigues you, too, here’s why buffalo chicken pizza just works:

INGREDIENTS FOR BUFFALO PIZZA WITH CHICKEN
This buffalo chicken pizza recipe has just 6 ingredients, and they’re all packed with flavor!
- Homemade Pizza Dough. For a long time, we used this recipe for Homemade Pizza Dough. Then we discovered two of the four family members have a gluten sensitivity and switched to einkorn flour. This Overnight Einkorn Pizza Dough is now our go-to for pizza night.
- Blue Cheese or Ranch Dressing. Mr. Crumbs loves blue cheese dressing with anything buffalo, but I love creamy Ranch Dressing. We use whichever dressing we have already made in the house. You pick whichever your family prefers!
- Chicken. We almost always have shredded All-Purpose Chicken on hand in the freezer thanks to batch cooking! If you don’t, leftovers from a rotisserie chicken work great. You can also make Instant Pot Whole Chicken ahead of time or bake a chicken breast or two while the oven preheats.
- Fresh Mozzarella Cheese. You really need to make sure to get fresh mozzarella for your pizza. It has a fantastic flavor and is better for you than the shredded kind.
- Buffalo Sauce. Make Homemade Buffalo Sauce with just 4 ingredients (it’s my secret recipe)! Frank’s Red Hot Sauce is a good store-bought option for hot sauce if you don’t want to make Homemade Hot Sauce with fresh peppers from your garden.
- Blue Cheese or Gorgonzola. These crumbly cheeses add a bit of extra salty tang that goes perfectly with the spicy buffalo sauce and the creamy dressing. Choose whichever you find for a better price.

HOW TO MAKE BUFFALO CHICKEN PIZZA RECIPE
Here are instructions to put this homemade buffalo chicken pizza recipe together:
Step 1. Preheat the oven to 400 degrees and get the pizza stone nice and hot. (We have had this pizza stone going on 10+ years, and it really is the best!)
Step 2. Prepare the homemade dough as directed.
Step 3. If necessary, bake one chicken breast on a rimmed baking sheet in the preheating oven for 15-20 minutes. Set it aside to cool slightly and bump the oven to the highest temperature possible. Our oven caps out at 550F, but a higher temp means a crispier crust.
- 400F = Soft, bread-like crust (you’ll need a much longer baking time)
- 450F = Balanced crust with just the right amount of chew (you’ll need a slightly longer baking time)
- 500-550F = Crispy, pizzeria-style crust (you’ll use the baking time in this recipe)
Step 4. When the dough has doubled in size, shape it into your favorite pizza shape.
Step 5. Chop the cooked chicken breast into pieces, or grab your cooked shredded chicken and toss it in your favorite buffalo sauce.
Step 6. Smear a thin to medium layer of ranch dressing or blue cheese dressing on your pizza dough.
Tip: The thinner the crust, the less sauce you need. Thicker crusts can handle more weight, and as a result, they can handle more sauce. If you have thin pizza but want more sauce, you can serve it on the side.
Step 7. Top the buffalo chicken pizza with fresh mozzarella, crumbled blue cheese, and chicken.
Additional buffalo chicken pizza toppings: You can always add fresh red onions, chopped celery, or a sprinkle of ranch seasoning!
Step 8. Drizzle a little bit of extra hot sauce to taste on top before placing your pizza in the oven.
Step 9. Bake the pizza until the cheese is melted and the crust is golden brown, for 4-7 minutes.
Step 10. Allow to cool for 2-4 minutes before slicing. Add additional blue cheese dressing or buffalo sauce drizzled over the pizza as desired.

After over 10 years of pizza nights, we’ve picked up a few tools and tricks that make all of the pizza-making adventures a lot easier!
- This is the pizza stone we use. It’s worked well for many years!
- If you don’t have a pizza stone, you can use baking sheets or a pizza pan. There’s no need to preheat them.
- We use a pizza peel to take our pizza in and out of the oven. And this cutting board works great when we’re ready to slice and serve.
- Allow the pizza to cool for 2-4 minutes before slicing (this awesome pizza cutter eliminates the issue of slices without cheese!).
- You can top the finished buffalo sauce pizza with a sprinkle of fresh cilantro or chopped green onions for a bit of color and flavor.
- Store any leftovers in an airtight container in the refrigerator for up to 4 days. Reheating in the oven or air fryer keeps the crust crispy. Speaking of crispy crust…
How to Avoid Soggy Buffalo Chicken Pizza
- Use the highest oven temperature
- Use a pizza stone to avoid steam getting trapped under the middle of the pizza
- Avoid over-saucing, especially with a thinner crust
- Dry the chicken and the fresh mozzarella if it’s overly moist
- Don’t overload the pizza with cheese or toppings

Yes, but make sure it’s thawed first to avoid adding extra moisture to the pizza while it cooks. I almost always have extra cooked, shredded chicken in the freezer, and it’s easy to pull out a cup for this buffalo pizza recipe!
Is buffalo chicken pizza healthy?
It is if you make it homemade! This way, you are saving yourself from consuming the preservatives, additives, and sugars found in take-out pizza. Making the dough and the sauces is very easy, and it bakes up in no time!
Can you put sauce directly on pizza dough?

Ingredients
- ½ batch of Homemade Pizza Dough (385g)
- 1 batch of Homemade Ranch Dressing OR homemade blue cheese dressing (you may have extra) (180g)
- 1 chicken breast or 2 cups shredded chicken (280g)
- ½ cup Buffalo Sauce, divided (120g)
- 4 oz fresh mozzarella cheese (114g)
- 2–4 oz blue cheese or gorgonzola, crumbled (56-112g)
Instructions
- Preheat the oven to 400 degrees.
- Prepare the pizza dough as directed.
- If necessary, bake one chicken breast in the pre-heating oven for 15-20 minutes.
- Set the chicken aside to cool and bump up the oven to the highest temperature you can (see below for options).
- When the dough has doubled in size, shape it into your favorite pizza shape.
- Chop the cooked chicken breast into pieces and toss with 2-3 Tbsp of buffalo sauce.
- Smear a thin to medium layer of blue cheese or ranch dressing on your pizza crust and top with fresh mozzarella, crumbled blue cheese, and the chicken.
- Drizzle a little bit of extra hot sauce on top of the pie before you place it in the oven.
- Bake until the cheese is nice and bubbly, and the crust is golden brown, for 4-7 minutes.

I use bottled wing sauce as my base. You can add some Frank’s to up the heat. Then I top with chicken, chopped celery, crumbled bleu cheese, some shredded jack. On top of that, shredded mozzarella. In upstate NY, celery sticks are regularly served with Buffalo Wings. Chopped up, they add a nice crunch to the pizza.
Sounds tasty. However, I would probably add some slices of red onion on mine. I used to work for a pizza place and the buffalo chicken pizza was one of their gourmet pizzas. That’s where I get the red onion idea.
