When I was a kid, I practically lived on ramen recipes during summer vacation.
It didn’t matter that I grew up in Texas and it was 100+ degrees outside – lunch was always ramen soup.
I felt pretty smart at the time because it was something I could make all by myself. I even considered myself an “expert” in ramen!
However, it wasn’t until I learned how to read ingredient labels that I realized just how AWFUL that packaged chicken ramen soup is for you!
Thankfully, you can make a delicious soup using this homemade ramen recipe in just 5 minutes that I SWEAR tastes just like the real thing!

Easy Homemade Ramen Recipe
My kids were actually the ones who asked if I could make them a homemade ramen recipe. They saw the soup in practically every grocery store and asked me what it was… was it healthy? Was it something we could buy that week?
My answer was always the same – no, it’s not healthy, and no, we’re not buying it this week.
But I truly have fond memories of making my own ramen noodle soup and feeling empowered at the fact that I did it all by myself.
I want those same memories for my kids, so I created this SUPER SIMPLE homemade ramen recipe that relies on basic pantry ingredients!

How do you make really good ramen?
You only need a few basic ingredients to make a really good ramen noodle soup:
- Stock (Vegetable or Chicken)
- Sesame Seed Oil
- Coconut Aminos (or Soy Sauce)
- Ground Ginger
- Granulated Garlic
- Noodles
I’ve tested this ramen soup recipe with fresh garlic and fresh ginger and honestly? We all actually preferred the dry spices instead!
It’s a win-win for us, because not only do I always have these ingredients on hand, but the kids can measure them out on their own and make this soup without me!

What are the different ways to make ramen?
Consider the basic ramen recipe above a blank slate. Once you’ve made the noodles and broth, you can top the soup with all sorts of options and make your favorite version of ramen!
- Vegetables (grated carrot, thinly sliced radishes, diced red pepper sliced mushrooms, bok choy, spinach, etc.)
- Soft Boiled Egg
- Green Onion
- Shredded Chicken
- Sriracha
Want to make a chicken ramen recipe?
Easy! Simply use chicken broth and then add shredded chicken, plus any other toppings you’d like.
How do you make ramen from scratch?
Making ramen from scratch is really, really easy!
- Bring all of the ingredients, except the noodles, to a boil.
- Add the noodles and cook al dente, as directed on the package.
- Top with your favorite toppings, and enjoy!

What to serve with this homemade ramen recipe?
I usually make homemade soups with homemade bread, baked potatoes, baked sweet potatoes, or salads. No-knead artisan bread is good because it has a hard crust, but my 90-minute man bread would be great for grilled sandwiches! Ingredients
- 2 quarts stock (Vegetable or Chicken)
- 1 tsp sesame seed oil
- 1 Tbsp coconut aminos (or soy sauce)
- 3 ½ tsp ground ginger
- 1 tsp granulated garlic
- 2 packages ramen noodles (any flavor, noodles only!)
- Additional Toppings as Desired (optional):
- Vegetables (grated carrot, thinly sliced radishes, diced red pepper sliced mushrooms, bok choy, spinach, etc.)
- Soft Boiled Egg
- Green Onion
- Shredded Chicken
- Sriracha
- etc.
Instructions
- Bring the stock, sesame seed oil, coconut aminos, ground ginger, and granulated garlic to a boil.
- Open the packages of noodles and throw away the seasoning packet. Add the noodles to the boiling stock and cook for 3 minutes.
- When the timer beeps, add in additional toppings as desired. Serve warm!
3.5 tsp ground ginger is quite a lot. Overpowering

I didn’t see this addressed in your post, so I apologize if I missed it. Where do you get your ramen noodles? Do you just use the noodles that come in the individual packs at the grocery store and toss the packet?
Hey Jen, just grab any type of ramen and use only the noodles none of the seasoning just like you mentioned in your comment. The recipe calls for two packs of the ramen noodles and you can either save or toss the seasoning packets.
