Homemade Ramen Noodle Soup

Try this healthy homemade ramen soup recipe for a customizable lunch that kids can make themselves. Tastes just like the classic, without the funky ingredients.

Ingredients

  • 2 quarts stock (vegetable or chicken)
  • 1 tsp sesame seed oil
  • 1 Tbsp coconut aminos (or soy sauce)
  • 3 ½ tsp ground ginger
  • 1 tsp granulated garlic
  • 2 packages ramen noodles (any flavor, noodles only!)
  • Additional Toppings as Desired (optional):
    • Vegetables (grated carrot, thinly sliced radishes, diced red peppers, sliced mushrooms, bok choy, spinach, etc.)
    • Soft boiled egg
    • Green onions or scallions
    • Shredded chicken
    • Sriracha or hot sauce
    • Chopped cilantro
    • Bean sprouts
    • Chopped peanuts

Instructions

  1. Bring the stock, sesame seed oil, coconut aminos, ground ginger, and granulated garlic to a boil.
  2. Open the packages of noodles and throw away the seasoning packet. Add the noodles to the boiling stock and cook for 3 minutes.
  3. When the timer beeps, add in additional toppings as desired. Serve warm!

Notes

  • Do you want to make a chicken ramen recipe? Easy! Simply use chicken broth and then add shredded chicken, plus any other toppings you’d like.
