Detox Chicken Noodle Soup

This easy Instant Pot chicken detox soup is simple, healthy, and quick to make. Great for cleansing and dieting, plus its freezer friendly & versatile (mix and match seasonal veggies)! Enjoy alongside an Instant Pot sweet potato.

Ingredients

  • 1 large onion, diced (about 1 cup)
  • 3 celery ribs, diced (about 1 cup)
  • 4 large carrots, diced (about 2 cups)
  • 2 cups frozen peas
  • 3 Tbsp fresh ginger, chopped finely
  • 1 lb boneless skinless chicken breast, whole
  • 2 quarts chicken broth (or make your own chicken stock)
  • 1 Tbsp apple cider vinegar
  • ½ tsp Italian seasoning
  • ¼ tsp turmeric
  • ¼ tsp crushed red pepper
  • 3 cups broccoli florets (fresh or frozen)
  • Salt and pepper, to taste

Instructions

  1. In a 6 or 8 quart Instant Pot (I have this 8 quart Instant Pot Duo), place all the ingredients EXCEPT broccoli in the inner pot.
  2. Cook on high pressure for 10 minutes. Let the pressure release naturally (i.e. do nothing) for 10 minutes, and then turn the valve to release the remaining pressure.
  3. Remove the whole chicken breasts from the Instant Pot and place them on a plate.
    Put the broccoli into the soup and seal the Instant Pot. Do not turn the Instant Pot on – the residual heat will cook the broccoli.
  4. Meanwhile, shred the cooked chicken using two forks, or chop into bite-size pieces. Put the cut chicken back into the soup and stir.
  5. Serve warm.

Notes

  • This healthy soup can be prepped early in the day and set on a timer to cook while you’re away.
  • You could even make this soup a “dump” freezer meal! Just combine all the ingredients (except the broccoli and stock) in a freezer-safe plastic bag.
    • When you’re ready to cook, dump the ingredients in the Instant Pot and add the stock. When the soup is done, add the broccoli and dinner is ready!
  • Store in an airtight container in the refrigerator for up to 5 days.
