Roasted cabbage makes a delicious side dish for a variety of flavors! This easy and versatile recipe lets you choose the flavor profile: ranch, bacon, balsamic vinegar, or lemon garlic butter – YUM! You’ll want to try all the versions of this roasted cabbage recipe that’s tender on the inside, and deliciously caramelized on the outside.




  1. Preheat the oven to 400F.
  2. Place the cabbage cut-side down and cut through the center, top-down, through the core.
  3. Cut each half in half again, through the core again. You should now have 4 cabbage wedges.
  4. Place the cabbage wedges on a baking sheet (I have these USA baking sheets) and spray the tops and sides with cooking spray.
  5. Season liberally and roast in the oven until the cabbage is dark brown and caramelized – about 30-35 minutes.


  • Place the roasted cabbage steaks in an airtight container and store them in the refrigerator for 3-5 days. You can reheat the cabbage in the oven or microwave or shred the cold roasted cabbage and add it to a sandwich or salad.
