Try this one-pot wonder recipe, Slow Cooker Quinoa Chicken Cacciatore! Just toss a few ingredients in the slow cooker, or have it ready on the stove-top in 30 minutes! Pairs perfectly with a delicious Kale Caesar Salad!

Ingredients

  • 1 cup dry quinoa, rinsed
  • 1 3/4 cups chicken stock
  • 1/4 cup dry white wine–or additional chicken stock
  • 1 (16 oz) bag frozen pepper and onion strips
  • 1 tablespoon minced garlic
  • 1 6 ounce can tomato paste
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1 pound chicken breast, cut into 1” cubes
  • Parmesan Cheese for serving

Instructions

  1. For Slow Cooker: Combine all ingredients in slow cooker and cover. Cook on low for 5-6 hours and high for 3-4 hours.
  2. For Stove-Top Method: Combine all ingredients in large pan/skillet, adding 1/ 2 cup additional water to recipe. Bring to a boil. Cover and reduce heat to medium-low. Simmer for 20 minutes until quinoa is absorbed and chicken is cooked through.
  3. Serve with freshly grated Parmesan Cheese if desired.
