Cheesecake Baked Apples

A simple and healthy recipe for baked apples stuffed with cheesecake. Makes for a perfect dessert that’s easy to make with just 4-ingredients and no sugar!

4 apples, washed and dried
4 oz full-fat cream cheese, softened to room temperature
½ tsp vanilla extract (or ¼ tsp ground cinnamon)
1 Tbsp maple syrup (or honey)
Preheat the oven to 375F.
Wash and dry your apples. Cut them in half through the center of the apple horizontally.
Use a small cookie scoop (I have this one ) or a melon baller to scoop out just the very center of the apple where the seeds and core are.
In a small bowl, combine the cream cheese, vanilla (or cinnamon) and maple syrup (or honey) and mix them well.
Using the cookie scoop again, scoop about 1 Tbsp of the filling into the center of each apple, where you had just scooped out the seeds and core.
Place the apples, cream cheese side up, in a 9”x9” glass baking dish. Pour 2 Tbsp of water into the bottom of the dish.
Bake the apples for 30 minutes.
Allow to cool just slightly before serving.
