Question: What tastes better than tortillas, wraps better than tortillas, is easier to make than tortillas but does the same thing as tortillas?
Answer: Crepes!
A friend of ours owns the best crepe shop in town and it’s such a treat to indulge in his delicious crepes. It’s because of him that my son willingly tried a savory buckwheat crepe with spinach and eggs!
I’m at For the Family today, sharing my basic crepe recipe. It was born out of the desire to have crepes for breakfast without leaving the house. I knew they were delicious because the kids at them faster than I could cook them. That says a lot considering it only takes a minute or two to make a crepe!
Ever since, I try to double or triple the batch so we can make our favorite lunch: crepe wraps with peanut butter and bananas… or apples, or mangos, or blueberries or whatever else we happen to have in the house. It takes 2 minutes to assemble and the kids L.O.V.E. them. I love them too, especially since I can control every single ingredient, including the crepe! They can even be made gluten-free since they’re more egg-y than flour-y.

I have never made crepes at home, but after seeing how you used them, I will have to give it a try!
I made these last night for me and my 14 month old daughter. My husband was away for the night so I decided I was not making a meal meal. We smothered them with peanut butter and bananas. It was devine! Lots of leftovers too for this week! I love how easy they are to make! Thanks for sharing 🙂
