Learn How to Roast Beets with this simple and easy method. Packed with nutrition, beets are sweet and delicious in season, especially in my Roasted Vegetable Kale Salad recipe!

Ingredients

  • 12 lbs beets, whole
  • Note: Roasting beets using foil is the easiest method, so that’s what I’m sharing here. I’ve included instructions for roasting beets without foil in the post content.

Instructions

  1. Preheat the oven to 425F.
  2. Wash and scrub the beets. Wrap each beet individually in aluminum foil.
  3. Bake in the oven for 35-45 min, using a fork or a sharp knife to test for doneness. The beet is done when a knife or fork easily pierces the beet (once you get through the foil).
  4. Use an oven mitt to remove the beets from the oven and still using the oven mitt, carefully remove the foil from the beet. Set the beet aside to cool for 5-10 minutes.
  5. Once the beet is cool enough to handle, place the beet under running tap water and use your fingers and thumb to rub the skin off. It should come off fairly easy.
  6. Then use a knife to cut off the stem and root of the beet.
  7. Serve whole, or sliced or cut as desired.
