This healthy fruits pizza comes together fast for a beautiful dessert that only looks like it took a lot of effort. Lightly sweetened sugar cookie crust, cream cheese frosting, and topped with seasonal fruit.

Ingredients

Scale
  • One batch of Healthy Sugar Cookies
  • 8 oz cream cheese, room temperature
  • 24 Tbsp honey
  • 13 cups fresh seasonal fruit, washed and sliced/diced

Instructions

  1. Preheat the oven to 350F. Prepare the dough for the sugar cookies. Press the dough into a 9” x 12” baking pan and bake for 10-13 minutes, or until the cookie is light golden brown.
  2. When the cookie is done, set it aside to cool completely, for about two hours.
  3. When the cookie is completely cooled, combine the cream cheese and honey in the bowl of a stand mixer until it is smooth and creamy. (I use the same mixer I used for cookies; simply wipe it out with a paper towel first.)
  4. Spread the cream cheese mixture evenly over the cookie, getting as close to the edge as you can.
  5. Top as desired with fresh seasonal fruit.
  6. Cut into squares and enjoy!

Notes

There are two main ways you can make this easy fruit pizza recipe a day ahead of time:

  • Prepare the cookie dough, but don’t bake it. Just put it in the freezer or fridge, unbaked. The next day, press the dough into the cookie sheet and bake.
  • Prepare the ingredients separately. Bake the crust, mix the icing, and prepare the fruit, but don’t actually assemble the pizza.
