
Wouldn’t it be nice to have a plan in place, a healthy food meal plan that will fill tummies, nourish bodies and not cause your bank account to go in the negative at the same time?
Look no further, because with meals like 15 minute stove-top spaghetti (using fresh, in-season tomatoes), lentil macaroni and cheese (made from pantry staples) and chicken and spinach enchiladas, your bellies AND your wallet will be full!
I’ve learned a lot about feeding my family real food on a budget, but one thing is always constant: If you don’t feed them food they like, your plan won’t work. And that’s why I’m not randomly pulling meals out of a hat for these monthly meal plans.
Every meal is chosen because we’ve either eaten it ourselves, a friend of ours has eaten and recommended it, OR it it’s very similar to something we would make for our family (and it’s on our own meal plan for the month!).
But just because my family eats this way, doesn’t mean yours has to. Pick and choose whatever meals sound like something your family would enjoy and start from there.
Try a new recipe, or stick with the tried-and-true. It’s really up to you!

Breakfast
Many families have their own typical breakfast routine, but sometimes it’s nice to have something other than cereal and oatmeal.
This month I’m sharing a few ideas that are guaranteed to rock the socks off your family. They’re made with ingredients you’ll likely already have on hand and depending on your mood, they can all easily be doubled for future breakfasts.
Lunch

My goal is to always serve leftovers first so that you’re not wasting food, but then try some new recipes when those are all gone. These three below are perfect for on the go or at home, and they won’t heat up the kitchen either!

Dessert
I included one really easy and one slightly challenging dessert recipes this month. Use on-sale produce for the ice pops, and save the cheesecake for a special occasion, like Monday!
