This cottage cheese and eggs breakfast scramble is my favorite way to start the day! Rich, creamy eggs with a big protein boost? Yes, please!

I’ve been eating scrambled eggs almost daily for well over a year now. I love that they’re affordable, easy to make, and packed with protein since I add both egg whites and cottage cheese.
If you’ve never added cottage cheese to your eggs before, it’s a 10/10 for me. It gives that cheesy flavor without the grease, and if you do it the right way, the curds melt right into the eggs, giving you soft, fluffy scrambled eggs.
WHY MIX COTTAGE CHEESE WITH SCRAMBLED EGGS
So why mix cottage cheese with scrambled eggs?
- Frugal protein boost. Cottage cheese is one of my favorite frugal protein sources, and the ¼ cup in this easy breakfast recipe gives you over 6 grams of extra protein! Add in another 6 grams from the egg whites, and you can see why this is one of my favorite high-protein breakfasts.
- No noticeable texture or flavor change. The curds melt into the eggs, so you don’t even notice them when it comes to taste or texture. You just know it tastes good. If you aren’t a fan of cottage cheese on its own, try it in this recipe.
- Creamy factor. Mixing cottage cheese and eggs gives you light, fluffy, creamy scrambled eggs. You don’t even need to blend it up beforehand!
- Satisfying. Eggs also rank high on the satiety index, which means they can help you feel fuller for longer. And they can suppress ghrelin, the hormone that stimulates your appetite.
No wonder I feel so satisfied after eating cottage cheese and eggs for breakfast!

COTTAGE CHEESE AND SCRAMBLED EGGS INGREDIENTS
- Eggs. Using two large eggs adds the bright yellow color from the yolks and some of that satiating healthy fat.
- Egg Whites. I prefer to use carton egg whites because they’re easier to measure and don’t waste egg yolks. Costco has the best price.
- Cottage Cheese. One of my favorite frugal protein sources! I use 1% cottage cheese.
- Optional Seasonings: Salt, black pepper, and Everything Bagel Seasoning. I highly recommend the everything seasoning to really take these eggs up a notch. You could also try dried chives, garlic powder, or your favorite seasoning blend.
HOW TO MAKE COTTAGE CHEESE AND EGGS
Making cottage cheese and scrambled eggs requires just a little bit of technique, but I promise you’ll master it in no time.
Step 1. Preheat a non-stick skillet over medium heat. Spray with non-stick cooking spray.

Step 2. Combine all of the ingredients in a large glass and scramble with a fork.

Step 3. When the pan is ready, pour the eggs into the skillet. Season with salt, pepper, and Everything but the Bagel seasoning (optional, but highly recommended).

Step 4. When the edges are cooked, use a spatula to push the cooked edges towards the center of the skillet. Pick up the skillet and tilt it so the raw egg “spills” onto the surface of the pan. Repeat this process until all the eggs are cooked.
Note: If you like your eggs well done, turn the heat off and flip the cooked eggs over on top of themselves. The residual heat will cook the eggs a bit more without browning them.

I like to use 2 whole eggs, 2 egg whites, and ¼ cup of cottage cheese. Those proportions give me the protein I want, along with the satisfying fat of the whole eggs, and the creaminess of the cottage cheese. You can play around with the proportions to find your perfect balance of cottage cheese and eggs.
What can I add to this breakfast cottage cheese recipe for extra flavor?
If you don’t feel like adding Everything but the Bagel seasoning, try a different seasoning blend, like Homemade Taco Seasoning or Chili Seasoning. Add a drizzle of Hot Sauce or garnish with green onions.
