We didn’t follow our menu plan as I originally planned last week… actually none of the meals went as planned.
- First, we ended up not hosting family dinner (with a re-do planned for this week) on Sunday.
- Then we had sautéed asparagus instead of potato wedges on Monday.
- I forgot to add the black beans to our vegetable pasta bake on Wednesday (and I forgot to bake it, lol).
- By the time Friday came, we still had lots of leftovers in our fridge (even after two designated leftover days!), so we skipped pizza night.
All is not lost though. We didn’t waste any food and the items we had planned on eating will be available for next month’s meal plan!
We have three celebrations this week – our wedding anniversary is shared with Father’s Day (today!) and my birthday is on Friday. I have a family favorite planned on Monday night and I’m sure I’ll be going through pizza-withdrawals by the time Friday comes again. Saturday night is a new recipe and I hope to share it with you all (once I verify that it tastes good that is… don’t want to suggest anything gross!).
