Happy Monday!
How was everyone’s Easter? Ours was fabulous – lots of good food, lots of laughs, lots of jelly beans… it couldn’t have been better. The cheesecake Easter basket above was our homemade version – tasty and fun! Although the kids were more interested in the jellybeans than the cheesecake!
Today happens to be the first Monday of my meal-planning month (which by the way, revolves around when we get paid, not the first day on the calendar), so I’m sharing what I have planned for the next four weeks. Just writing it out makes me hungry!
I’ve got a few tried and true recipes, plus some new {yummy} ones. I used the method I shared here, came up with meals based on what I already have in the freezer, fridge and pantry, and wrote a shopping list of everything else that’s needed to complete the meal. Our “normal” schedule is a little “not-normal” this go-around (shocker, right?) – I am on break from teaching for the first two weeks and my husband will be out of town for the last week. I tried to include some of Mr. Crumbs favorite meals while I was off, saving the PB&J nights for when he’s out of town.
Week 1
(S) Easter dinner w/family, bringing roasted dill carrots & mini cheesecake Easter baskets
(M) Marinated Greek grilled chicken, Greek couscous, garlic spinach
(T) Leftover Greek chicken tacos, coconut rice, southwestern corn, homemade salsa, homemade tortillas
(W) Veggie fried rice w/whatever veggies I have on hand and garbanzo beans
(Th) Spinach & chicken stuffed shells, veggie
(F) Homemade pizza
(S) Grilled tri-tip, veggie x2, homemade buns w/homemade garlic butter
Week 2
(S) Family dinner at Dad’s house
(M) Leftover tri-tip tacos, coconut rice, southwestern corn, homemade salsa, homemade tortillas
(T) Ranch chicken club sandwiches w/homemade buns, roasted potato wedges, veggie
(W) No-meat Southwestern salad w/black beans
(Th) Sweet & Sour Shrimp, coconut rice
(F) Homemade Pizza
(S) Grilling ribs, french bread w/homemade garlic butter, veggie x2 & salad
(Chicken Club Sandwiches, Partially-Eaten Roasted Potato Wedges)
Week 3
(S) Family dinner at Dad’s house
(M) Tilapia & chicken picatta w/lemon caper pasta, veggie x2
(T) leftovers (back to school)
(W) Veggie fried rice w/whatever veggies I have on hand and garbanzo beans
(Th) leftovers
(F) Homemade pizza
(S) Grilled spicy chicken, homemade macaroni & cheese, veggie x2
Week 4
(S) Date night dinner (dropping Mr. Crumbs off at training & I’m staying the night)
(M) Scrambled eggs, pancakes (from the freezer), sausage links
(T) leftovers
(W) Sandwiches (PB&J and/or grilled cheese), fruit
(Th) leftovers
(F) Stromboli/Calzones (homemade pizza folded in half)
(S) More than likely spending the day visiting Mr. Crumbs, so I’m leaving this day open
